1. Recipes for Memorial Day Weekend

I'm really looking forward to this weekend.  I'm going
to the beach!  I hope you also have something
relaxing planned.  I thought I'd send out a few recipes
that might help you enjoy the 3 day vacation.

Teriyaki Seitan
1 medium onion, diced
½ cup sliced mushrooms
16 ounces seitan cutlets, cut into strips
1/2 cup teriyaki sauce

Marinade seitan in teriyaki sauce 1hr or more before
cooking.  Oil a skillet. Add the onion and sauté over
medium heat for about 5 minutes, adding water 1
tablespoon at a time if onion begins to stick. Cook until
onion is translucent. Add mushrooms.  Add the seitan
strips  

Citrus Guacamole
2 avocados - peeled, pitted, and mashed
1/2 tablespoon lime juice
1/2 tablespoon orange juice
1/2 tablespoon pineapple juice
1/4 teaspoon ground cumin
1/4 cup coarsely chopped cilantro
salt to taste
1 teaspoon hot pepper sauce, or to taste (optional)
 
In a large bowl, stir together the avocados, lime juice,
orange juice, pineapple juice, cumin, cilantro and salt.
Mix in hot pepper sauce if using. Serve immediately, or
refrigerate until serving. Place one of the avocado pits
into the bowl to help keep it fresh.  

Carob Chip Peanut Butter Cookies
3/4 c peanut butter (no additives or sugar)
1 large egg
1/2 c applesauce
2 1/2 T brown rice syrup
1/2 c almond or hazelnut milk
1 c whole wheat pastry flour
1 1/2 T baking powder
1/2 c carob chips  (chocolate chips if you don't like carob)
1/2 c peanuts (optional)

Preheat oven to 350° convection or regular. Have ready
two nonstick cookie sheets. In a large mixing bowl, whisk
until smooth, peanut butter, egg, applesauce, brown rice 
syrup, milk. Combine flour and baking powder with wet
ingredients. Add carob chips and optional peanuts.  Drop
about 3 T of batter for each cookie onto cookie sheets.
Bake for 10 - 13 minutes until the top is beginning to
brown.  Let cool and then serve, These cookies taste
great frozen.
