I love July 4th! I always look forward to BBQ's and fireworks!
I teach cooking to kids 5 and under at an amazing place
called Kidville on the UWS (they also have a location on the
UES), and today we celebrated Independence Day early.
We decorated a clear sheet of gelatin with blueberries,
strawberries, and whipped topping to create an American
flag. I had so much fun watching them, and the children had
a BLAST. They of course couldn't help but eat the
blueberries and strawberries while creating their masterpiece.

We Can Learn From Very Young Children's Relationship
w/ Food
It's amazing to see children that young and how they
interact with food. They can be interested enough for a few
bites and then they are off to play. They had at least as
much fun playing with their food creating this flag as they
did eating it. For most kids that age, having fun and being
curious about the world around them is far more interesting
than eating any food on their plate, whether it be ice cream,
cake, or pizza! Sometimes I sit amazed by how they can
enjoy a few bites and then walk away as though the food no
longer existed. I wish I could be that way again. It's just
so healthy!
Most of us can barely stand to know there is still a pint of
ice cream in the freezer without feeling a desperate need to
finish it off! :-) Has life become so boring that food is the
highlight?
By the way, I'm taking a psychology course this summer and
I have gained some new insights into hunger, obesity,
genetics, etc. and how these things affect our relationship
with food. In the next couple weeks I'm going to be offering
information and ideas based on what I've learned that will
help you devise plans to achieve your health goals.
For now... instead of thinking of July 4th as a day to
"excuse yourself from your diet," think of July 4th as though
you really were a child 5 yrs of age or under. Eat a few bites
of your favorite foods then let loose, play and have fun...move
your body, explore, laugh, play games...be curious about life
again.
And here is an amazing healthy recipe you can include on the
itinerary. The mustard really makes this! Special thanks to

Pirogue
In cooking, a pirogue denotes any vegetable that is hollowed
out and stuffed. It is made as a reference or homage to the
boats used by the Cajuns to fish for crawfish, shrimp, and
marsh birds.)
1 tsp chopped Garlic
Pinch Paprika
Oregano Leaves
Salt & Freshly Ground Black Pepper
1 Tbsp Chopped Scallions
1 Tbsp Chopped Cooked Chicken Sausage, optional
(this dish really tastes great without the sausage if
you're looking for something vegetarian)
1 Tbsp chopped Parsley
1 tsp Grainy Mustard
2 Tbsp Sautéed Spanish Onion
2 Tbsp Chopped Tomatoes
1-6 inch piece of zucchini, chayote or eggplant, cut in
half lengthwise, with the heart/meat scooped out, reserved
and chopped
3-4 Tbsp Bread Crumbs
1 Tbsp Shredded Parmesan, optional
Preheat oven to 400F. In a small bowl combine the
first set of ingredients. Stir to combine. Place the filling
inside of the hollowed out vegetable. Cover with
breadcrumbs and optional cheese. Press down gently to bind
the filling and breadcrumbs. Have the children place their
hollowed out vegetables in the baking pan. Add 1-2 Tbsp
water to the pan. Bake for 15 minutes until brown and
bubbling. Serve hot or warm.
