1. Last Week & CSA Food Solutions

Wow! It looks like there was a major jumble in last week's
newsletter. I have no idea what happened, but the first half of
the article was at the bottom of the newsletter and the 2nd
half at the top. I sent it out via webmail instead of Outlook,
so perhaps that had something to do with it. I will forward
you a copy of the real thing after I send this one out. Did
any of you receive last weeks newsletter in a normal
format?

Blessing Our Friends and Family

I have been promising you some tips on what to do with all
of the fresh produce you will get every week if you join a
CSA this year. I am already so excited to hear that many of
you have already looked into joining. Yay! It so good for the
environment, so good for the community, and almost surely
guarantees that you will eat more vegetables.

When you find out which day will be your regular pick-up for
the weekly harvest, schedule out an hour extra in your
calendar to prepare your food for the week.

When you arrive home with the farm fresh produce (just
talking about it makes my mouth water!) assess what you
have. In the first weeks of the season you will probably get
a lot of leafy greens, herbs, and strawberries. This is
variable depending on the CSA you join.

HERBS

Herbs often come in bunches that are more than we need for
the use of one dish. Storing them can be frustrating if you
are not acquainted with the best ways. I would break it
down for you here, but Martha Stewart has already done this
in a simple way. I definitely recommend her advice on this:

Lettuces

With your leaf lettuces, I recommend washing them and then
drying them in a salad spinner or letting them drain on a
paper towel for about an hour. Then wrap them in a dry
paper towel and put them in a container to store in the fridge.
Don't put them in the fridge while wet. Some people use
plastic bags, and that will work okay, but I find that my
lettuces last longer when I use something like a tupperware
container instead. I also like to rip up my lettuces before
hand. Some people wouldn't recommend this, but I find that
for those who are on the go, it makes it very easy to create
a salad when you want to cut down on prep time.

Think about how you'll want to use the salad produce you
have for the week and purchase any supplemental items you
like at the grocery store.

I definitely recommend freezing some of your herbs (see
Martha Stewart link) if you don't plan on using them within
the week. There will be other vegetables that you'll want
to go ahead and steam or sauté and place in freezer bags.

Steaming & Sautéing

Steaming and sautéing mixed veggies plain, with a little
salt, or teriyaki sauce is always a simple and easy way to
prepare dishes. You can then stick them in serving size
freezer bags, place them in the freezer, and grab and go
for work, or for dinner.

As the season progresses, I will be including recipes and
ideas for you in the newsletter based on the specific
produce you will be getting. I cant' wait! But now you
know how to handle the lettuces and herbs.

commitment to my health. I want to see my real body
underneath this cushion. I want to feel good when I walk
down the street and enter a room.

Sticking to a weight loss plan is hard. No doubt about it! This
program is designed to get you off the dieting cycle and get
you on a plan to achieve results. It's for individuals who are
ready to make a change and commit to giving this gift to
themselves. No more quick fix attempts. This is the real deal!

10 sessions - $1125

I Am - Strategic Solutions for Women in their 20's

I love working with young women! It's a time in life where you
are testing your own identity and power in this world, yet
sometimes you feel conflicted by the pressure of your parents'
and peers' ideas about what track you should be on. You have
your own mind and you want to use it...but sometimes you're
not sure about your different opinions. This program deals with
self-image, self-respect, confidence, and effective decision
making.

5 sessions - $575 (sliding scale available for this program...
