1. Important News and Spaghetti Squash

No Trash week is going pretty good! I am having fun trying to
problem solve and catching myself in shameful acts. I'm
learning about new foods and am surprised by how simple
changing just a few of my routines to help the environment
can be.

I want to share with you a great recipe I made last night.
But first I want to tell you that myheartdances.com has been

Spaghetti Squash

As a result of my trip to the farmer's market at Union Square
on Saturday, I finally bought some spaghetti squash,
something I have been meaning to do for a long time, but
just never got around to.

What is it?

Spaghetti squash is this amazing winter squash that breaks
off into strings just like spaghetti when you scoop out the
center. You can serve it with tomato sauce and Wa La!, you
have a delicious meal completely made up of vegetables.

You want to cut it in half horizontally. Preheat your oven
to 375 degrees. Sit it on a baking sheet flesh side down,
skin side up. Bake it for 30 to 40 minutes, until the inside is
tender.

While my squash was cooking, I diced a yellow onion and
chopped up six cloves of garlic. I sautéed these in a
tablespoon of olive oil over medium heat. Then I cut two
large Portobello mushrooms into bite size pieces and added
them to the sauté with about a quarter cup of water. I then
covered until the mushrooms became tender. Just a few
minutes.

I put the sautéed vegetables in a bowl and heated up some
pasta sauce. I used tomato basil by Walnut Acres. When
the squash was done, I scooped out the inside and placed it
in a bowl. The tomato sauce was mixed in with the
vegetables and placed in a separate bowl.

You can mix it all together or serve separately. The great
thing about serving separately is that people can put as
much sauce on their spaghetti squash as they want.
